Potato, Onion, Ham & Gruyere Cheese Frittata

Frittata’s are great any time of day. Breakfast, lunch and/or dinner! You can basically use any ingredients to make it your own! I have made them with just ham & cheese, for the picky kids that won’t touch veggies. I have made them with just veggies. This is one hearty meal and it feeds a lot! I cut it into 6 – 8 wedges. It depends on the size of the pan and how many people I’m feeding. You don’t really need anything else to go with it, since everything is in this one dish!

Ingredients:

4 small red potatoes, diced
1 vidalia onion, cut into slivers
1 cup diced smoked ham
2 tablespoons unsalted butter ( divided )
2 tablespoons olive oil ( divided )
8 extra-large eggs
1 cup whole milk
2 tablespoons heavy cream
1 cup shredded gruyere cheese ( divided )
kosher salt and freshly ground black pepper
1 teaspoon each, thyme and parsley
1 cup grated parmesan, for finishing top
sour cream for serving

Optional Ingredients:

sliced mushrooms, sauteed.
asparagus, cut into bite sized pieces.
cheddar cheese, if preferred over gruyere
canadian bacon or bacon

Step by Step Instructions:

Preheat oven to 350 degrees

In a large non-stick pan that is oven safe, melt 1 tbsp of olive oil + 1 tbsp butter over medium heat. Cook onions until they are caramelized and potatoes are mostly cooked.  Add ham to the onion & potatoes and brown slightly. Dump onions, potatoes and ham out of the pan and onto a plate and set aside. Wipe pan out really well. The pan needs to be super clean.

In a large bowl, mix eggs, whole milk + heavy cream (half & half works fine, too) until well incorporated. Add 1/2 cup of  shredded gruyere, salt + pepper and set aside.

Turn pan up to high eat. Add 1 tbsp of olive oil and 1 tbsp of butter. When fat comes up to heat add egg mixture while “swirling” oil. Then quickly scatter around potatoes, onions & ham. Sprinkle with thyme + parsley. Top with 1/2 cup of shredded gruyere.

Put into oven, uncovered, for 20-25 minutes. Let it sit for 5 minutes then remove it from the pan with a spatula, place it on a cutting board.

Sprinkle with Parmesan cheese and serve with sour cream, if desired.
